Bonito is inspired by the traditional Japanese phenomenon Izakaya, a type of informal gastro pub that lately has gained popularity in trendy cities all over the world.  

The word bonito is is a form of dried, smoked fish that is sliced thinly and used as seasoning and topping in Japanese cuisine, primarily in warm and warm-ish dishes. The heat makes the thin bonito flakes move in a way that makes the dish appear “alive”.
