Enjoy a sustainable lunch
One third of all the food produced in the world is wasted before it even reaches the table. The charity Göteborgs Stadsmissionen want to reduce this food waste and have therefore opened up Restaurang Svinn – where all the food is prepared with “saved ingredients”.
You’ll find the sustainable lunch restaurant in the church Sjömanskyrkan next to the square Stigbergstorget in Majorna. Here, 95 percent of all the food is prepared using “saved ingredients” – perfectly edible food that would have otherwise been thrown away.
The ingredients are donated to Stadsmissionens Matcentral, that receives around ten tonnes of food every week from producers, merchants and grocery stores. About 80 percent of this food is then distributed to people in Gothenburg who for various reasons don’t have enough to eat. The remaining food is delivered to Restaurang Svinn, where chefs create a lunch menu that varies every week based on the donated ingredients.
– Restaurang Svinn is about sustainability in many ways. Most of the furniture is second-hand, and in the kitchen we offer work training for people far away from the job market, says Rebecca Sörling, head of operations at Göteborgs Stadsmissions Arbetsintegration.
